Sweet Potato Burgers
This is a favorite in our house! They are so delicious and filling. These pictures do not do the meal justice. I think I was in such a hurry to eat that I didn't worry how the pictures came out :) They are just that good.
Ingredients:
*2 cans cannellini white beans,
drained and patted dry
*1 large sweet potato, baked/peeled/mashed (about 2 cups)
*2 tsp agave syrup (or maple if you prefer)
*1 tsp cajun seasoning (or anything that sounds good to add. I usually put a
little cayenne in as well)
*1/4 cup whole wheat flour
*salt to taste if needed, lots of Panko crumbs for breading the burgers, and oil
for the pan (I use olive oil)
Bake sweet potato at 400° for about 45 minutes. Then peel and put into a large mixing bowl. Add the cannellini beans to the bowl. I have learned over time that drying the beans before putting them in the bowl helps with the consistency and makes the patties a lot easier to work with. Now mash the beans and potato together. Then add in the seasonings you decided to use and the flour. Mash until the mixture is a good consistency to form patties. If the mix seems too wet, just add more flour. Now on a separate plate pour out some panko crumbs. Form a patty and put on top of the panko. Coat the patty completely with the crumbs. Now put about a tablespoon of oil into a pan and put over high heat. Put patties into pan and cook until browned on both sides (like picture above).
There are a lot of ways to serve this. My favorite is a toasted bun with avocado (which I think is necessary here!), onions, jalapenos, and Pepper Plant (something we can get at our local store but you can also buy it here). Hummus or dijon would be great as well and/or any veggies of your choosing, such as tomatoes or lettuce.
