kale guacamole

Last week we finally gave in and bought a Vitamix!! I could not be happier with it. So far we have made juices, smoothies, and what I will be talking about today, guacamole. There is so much I want to make with it (soups, dressings, ice cream!). I will definitely be sharing the best concoctions I come up with! Now, onto the guac. I love guacamole and I have been craving it for weeks now. This was the first thing I wanted to make with the Vitamix. A recipe book came with the machine and there was a guac recipe that sounded great. I somewhat followed it but added in a couple things here and there. I had seen a recipe on Pinterest for kale guacamole that sounded interesting. I also had been to Costco and bought a huge bag of organic baby kale. I thought, why not add this into the recipe? It turned out so yummy and added bulk to the guac without extra calories and fat from more avocados.

Ingredients: 

  • 2 avocados
  • 1 tomato
  • 1 jalapeno (less or more depending on how spicy you like it)
  • about 4 stalks of kale (the baby kale I got came off the stalk and I added about 3 large handfuls)
  • 1/2 cup chopped onion
  • 2 tablespoons lemon juice
  • 1/2 cup fresh cilantro leaves
  • 1 teaspoon salt

Instructions: 

Now, all you have to do is combine ingredients in a Vitamix, food processor, or blender. If you are using a Vitamix, place the softer foods in the container first, solid items last (onion, jalapeno).
