the perfect summer salad
I must have salads on my mind since I posted one last week as well. But, on a warm summer day there really is nothing better than a fresh, cold salad. This one is so delicious. The combination of watermelon and mozzarella with some drizzled lemon vinaigrette is perfection. Also, the colors in this dish just brighten up any meal.
Ingredients:
- 1/2 small watermelon
- 2 heirloom tomatoes
- 2 mozzarella balls
- 2 beets
- basil, chopped small and sprinkled on top
{dressing}
- the juice of 2 lemons
- 1/4 cup olive oil
- pinch of salt and pepper to taste
Instructions:
Slice the tomatoes, mozzarella, and beets to be about the same size. The watermelon is a bit trickier. If you have a cookie cutter that would work great to get that round shape that matches the other items. I didn't have a cookie cutter so I actually used a measuring cup that was the right shape.
Emulsify the dressing by combining ingredients and shaking them together in a sealed container.
Layer the ingredients on top of each other. I did about two or three of each item. Then, drizzle the dressing over the salad and sprinkle some basil on top of that.
