blueberry kuchen

I am deviating away from the normal healthy food post today. Last week a friend of mine made this blueberry kuchen, which is really a German cake (seems more like a tart to me though). It was delicious and such a fun summery treat. It is a family recipe of hers and gave me permission to share here. I thought it was something others would enjoy as well. 

Serves 8.

Ingredients: 

{crust} 

  • 1 stick butter
  • 1 cup flour
  • 2 tablespoons sugar
  • 1 teaspoon white vinegar
  • pinch of salt

{filling} 

  • 1-2 pints blueberries
  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1 teaspoon cinnamon

Instructions: 

{crust}: With a fork combine softened butter, flour, salt, sugar, and vinegar. Spread crust mixture 1/2" - 1" up the sides and on the bottom of a greased 9" springform pan. 

{filling}: Mix berries with sugar, flour, and cinnamon. Pour into the crust.

Bake at 375° for about 45 minutes. Enjoy! 

 

This wouldn't be a Sarah di Grazia blog post without at least mentioning some healthy alternatives to try for this recipe. Keep in mind I have not tried any alternatives on this particular recipe but have read that it can be done, so proceed at your own risk! 

I have read that the butter in cake-like recipes (such as this) can be replaced partially or completely with applesauce. Avocado is another substitute but is better for cookie type recipes. You can find out more here on Fitsugar.  

Coconut oil could also replace the butter. I recently made my hubby a cake for his birthday and used coconut oil instead of canola and it turned out great. I have read this can be a good sub for butter as well.
