a healthier brown betty

Apple picking this past weekend was fun but now we have to figure out what to do with 9 pounds of apples! My mom suggested an apple brown betty, which sounded delicious. I looked up a few recipes but they all called for lots of butter, breadcrumbs, and sugar. I decided to just make this one up as I went instead. I love baking but I don't like putting lots of butter and sugar into my food so I am always trying to figure out ways around doing that. Usually by doing this the food turns out interesting to say the leastThis recipe, on the other hand, turned out great! It is gluten free, vegan, and pretty healthy considering it is a dessert.

Ingredients: 

  • 3 medium sized apples
  • 5 tablespoons melted coconut oil
  • 1/2 cup brown sugar  
  • 1 1/2 cups oats
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3 tablespoons lemon juice
  • 6 tablespoons water

Instructions: 

Set oven 350° and have an 8-inch square baking dish on hand. Core, peel, and slice apples. Mix the oats and coconut oil together and set aside. Whisk together sugar, cinnamon, salt, and nutmeg in a separate bowl. Then in a small container mix the water and lemon juice.

Grease the dish and spread one-third of the oats on the bottom of that dish. Then distribute half the apples on top of that and half the sugar. Repeat that process and end with the last third of the oats. Pour the lemon mixture over the top. 

Cover the dish with foil and bake for 35 minutes. Then, bring the oven temp to 400° and remove the foil. Bake for an additional 15 minutes. Serve warm on its own or with some ice cream for a real treat.
