spicy kale pesto + zucchini noodles

I found this recipe on Pinterest a while ago and have been wanting to try it out. I finally decided to do it last night for dinner. It turned out great! So healthy and flavorful. Also, super easy and quick to make. This meal is raw, vegan, and gluten free.

Serves 2. 

Ingredients: 

  • 4 zucchini
  • grape tomatoes sliced in half  
  • almond parmesan or if not vegan, parmesan
  • salt and pepper to taste

      {pesto}

  • 1/2 bunch kale
  • 1/4 cup pine nuts*
  • 2 cups basil
  • 4 tablespoons olive oil
  • 2 cloves garlic
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon salt (I LOVE himalayan salt. You can get some here)
  • red pepper flakes, to taste
  • the juice of 1 lemon

*The original recipe called for a 1/2 cup walnuts instead of pine nuts. This is a great alternative to save some money. The flavor will be less pesto tasting, but still delicious. You can also add a couple tablespoons of tahini in here if you want a creamier sauce.

Instructions:

Blend pesto in a Vitamix or food processor and set aside. 

Using a spiralizer (I used this. It is such a fun gadget! You can get one here) or julienne tool create "noodles" out of the zucchini. 

Combine the pesto, noodles, and tomatoes. Sprinkle some parmesan and s&p on top and you are done!
