maple cinnamon doughnuts with maple cinnamon almond butter glaze

Last summer you may remember my post I did on our trip to Oregon. While there we made a stop (or 2 or 3) at Voodoo Doughnuts and picked up some vegan doughnuts. They were DELICIOUS and I could not figure out how they were made. They were just so fluffy and buttery...Well, around November I discovered a cookbook titled Baked Doughnuts for Everyone on Amazon that has all gluten free and some vegan recipes. So, I put that on my Christmas/Hannukah wish lists (here is a link to the book and here is a link to the pan I asked for to go with). And now I can officially say that I have figured out how those fabulous Voodoo doughnuts are made (or at least the gist of it). This recipe was adapted from the cookbook. It is gluten free and can be made vegan. 

Yields 8 to 10 standard doughnuts or (in my case) 24 mini doughnuts

Ingredients:

{doughnuts}

  • 1/2 cup oat flour
  • 1/2 cup almond meal
  • 1/4 cup sweet rice flour*
  • 2 tablespoons ground flax meal
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg**
  • 1/3 cup unsweetened almond milk
  • 1/4 cup maple syrup
  • 3 tablespoons unsweetened applesauce
  • 1 tablespoon unrefined coconut oil, melted
  • 2 teaspoons vanilla extract

{glaze}

  • 1/2 cup creamy almond butter
  • 3 tablespoons unrefined coconut oil, melted
  • 3 tablespoons maple syrup, warmed
  • 3/4 teaspoon cinnamon
  • (optional) sprinkles

*Ok, I could not find sweet rice flour in the store and the recipe says there are no substitutions for this! I have never used this type of flour before but read it has a sticky consistency and nothing really comes close. I did a little research and read potato flour is kind of similar. So, that's what I used. It turned out fine. Probably not the perfect consistency (a little more dense) but it was ok. Here is a link to where you can get sweet rice flour. I just ordered some for my next batch.

**I know, this is not vegan. I am not vegan and like using eggs in my baking. If you are vegan use 1/4 cup applesauce instead of 3 tablespoons and 3 tablespoons of coconut oil instead of just the 1 and you can take out the egg.

Instructions:

  • Preheat oven to 350º and grease doughnut pan(s).
  • Combine dry ingredients in a large bowl (oat flour, almond meal, sweet rice flour, flax, cinnamon, baking powder, salt).
  • Whisk egg in small bowl. Add in the rest of the wet ingredients (milk, syrup, applesauce, oil, vanilla). Whisk all together.
  • Pour wet ingredients into dry. Stir with a wooden spoon until just combined. Only mix until you no longer see the dry flour.
  • Spoon the batter into the molds and bake for about 20 minutes. To check if they are ready, stick a toothpick into one and see if it comes out clean. 
  • Let cool for 5 minutes.
  • While the doughnuts are cooling you can make the glaze.
    • Mix together all ingredients until fully combined. Drizzle over cooled doughnuts (or just glob it on there like I did!).
