gluten free banana almond butter muffins
These muffins are hearty, healthy, and grain-free! They are full of protein and will leave you full for hours to come.
Makes 12 muffins
Ingredients:
- 1 cup almond butter (or nut butter of your choice)
- 2 ripe, mashed bananas
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 3 whole eggs
- 1/2 teaspoon salt
- 1/4 cup maple syrup (or honey)
- 1 teaspoon cinnamon
- 1/4 cup chia seeds
Instructions:
- Preheat oven to 350º
- Line a standard muffin tin with paper liners or lightly grease
- Combine all ingredients
- Divide batter evenly between muffin tins
- Bake for around 15 minutes or until a toothpick inserted into the center comes out clean
- Let cool for a few minutes before removing from the pan
