our favorite chemex coffee recipe

The Chemex is known for creating the least bitter coffee, and we have found this to be true. Chemex coffee is a regular in our house and while it takes more time to make than auto-drip, the coffee really is smoother, less bitter, more full-bodied, and worth the extra work/time. We are in the market for an auto-drip coffee maker (for lazy days) that makes quality coffee rivaling the Chemex so if you know of any amazing auto-drip makers let us know in the comments below. 

The recipe makes a little over 4 full coffee mugs of coffee.

Ingredients:

  • 5 1/2 cups water just below boil (boiling can burn the coffee)
  • 8 heaping tablespoons of ground coffee

Instructions:

  • Bring water to a boil and let sit while you grind your coffee (boiling will burn coffee)
  • Grind coffee beans to a fine-medium grind
  • Place Chemex coffee filter in Chemex
  • Run a little water over the filter while in Chemex to rinse filter and then pour water out
  • Add coffee grinds to filter
  • Pour water over grinds starting from center out in circular motions until top fills with water
  • Let coffee drain through to bottom of Chemex and then repeat with remaining water
  • After initial exposure to water, the water should drain continuously 

This coffee business really is about personal preference. We like our coffee on the strong side so if you like yours more watered down, feel free to add less coffee or use a coarser grind. If you like your coffee even stronger, add less water. We also add almond milk and maple syrup to our coffee instead of sugar and cream.
