Peanut butter crunch squares
Matt and I were just getting in line at a local health food store behind a group of teenagers incredibly excited to buy something in a tub. When we inquired as to what they were buying they offered for us to try one of the peanut butter crunch bar bites in the tub, and we too became hooked. It was always a decadent treat that we enjoyed until the raw food chef moved out of town, taking all her goodies along with her. It was then that I decided to try my hand at recreating her recipe because the ingredients listed were only peanut butter, brown rice crisps, agave nectar, and Himalayan salt. I think I nailed it, or my version however. These are seriously good, and seriously easy to make. The key, if you can do it, is to make the peanut butter fresh from the machine at the local health food store. This brings the goodness of these treats to another level! Below is the recipe:
Ingredients
1 lb peanut butter
1/4 cup maple syrup
1/4 cup tahini
1 pinch of sea salt (I did about 3-4 twists of salt)
1/2 cup brown rice crisps
Directions
Mix the peanut butter, maple syrup, tahini, and salt in a bowl. Fold in the brown rice crisps until they are evenly incorporated into your mixture. Spread the mixture into a parchment paper lined container and then place in the freezer. I used a 6x8 container and then just cut them into additional pieces, but you could use a 9x13 container as well. Let your mixture freeze for at least 30 minutes before taking them out and cutting them into bite sized cubes. Afterwards, store in the refrigerator for up to 2 weeks. And, ENJOY!
