roasted chickpeas
This is such a healthy, yummy snack. Chickpeas are loaded with fiber, protein, and iron, which really just makes it ok to eat the whole batch in one sitting :). I got the idea of making these after going to dinner at a local restaurant, Mundaka, recently. Their chickpeas were roasted in truffle oil and tasted so delicious. There are many different seasonings that could be added to these. They can be made savory or sweet. In this recipe I used Bragg Sea Kelp Delight seasoning that I picked up at whole foods (there's a pic of it below) or can be purchased here. Btw, that seasoning is awesome and tastes delicious on pretty much everything! These are vegan and gluten free.
Ingredients:
- 2 cups cooked chickpeas (if from a can then they need to be washed and drained)
- 1.5 teaspoons sea kelp seasoning (or any seasoning of your choice)
- 1.5 teaspoons olive oil
- 1/4 teaspoon salt
Instructions:
Set oven to 425º. Make sure chickpeas are completely dry by placing them on a paper towel and patting them. Now, toss chickpeas with olive oil, seasoning, and salt. Place them on a baking sheet in a single layer. Bake for 15 minutes, then flip and bake for another 15 minutes.
These are best eaten right away. Within a few hours they will get a little mushy. They would be great just as a snack or put into a salad as an added crunch.
