candied pecans + almonds

WARNING: these are highly addictive. Proceed at your own risk! 

Have you ever gotten the flavored almonds from the farmers market or is that just a Carmel/Monterey thing? They are so delicious but very expensive! I decided I would try making them myself and I gotta say, these are just as good. These nuts are great as a snack, in a salad, or packaged up as a gift. 

Ingredients:

  • 1 egg white
  • 1 tablespoon cold water
  • 4 cups whole, unsalted nuts of your choice ( I did 2 cups almonds and 2 cups pecans)
  • 1/2 cup coconut sugar (or regular sugar is fine)
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions:

  • Preheat oven to 250º
  • Beat egg white and water until frothy
  • Add in nuts and mix together until they are all covered in egg
  • Toss in sugar, vanilla, cinnamon, and salt
  • Stir until everything is coated
  • Spread nuts in a single layer on a greased baking sheet 
  • Cook for 1 hour, stirring every 20 minutes or so
  • Store in an airtight container
  • Enjoy!
